OLIVE OIL CATEGORIES
Olive oil can be divided into three basic categories, based on international standards such as the type of production (natural or mechanical methods), the acidity levels and other chemical characteristics including the flavour and aroma.
Virgin Olive Oil
Olive oil is considered virgin when it is obtained solely from olives by mechanical means. Virgin olive oils are further categorized, based on acidity and other characteristics.
- Extra Virgin Olive Oil
With 0-0.8% acidity
- Virgin Olive Oil
With acidity levels from 0.8 – 2%
Olive oil composed of refined olive oil and virgin olive oil
Comprising exclusively olive oil that has undergone refining and oil obtained directly from olives with 0-1% acidity levels.
Olive – pomace oil
Oil comprising exclusively of oils obtained by processing olive pomace oil and oils obtained directly from olives.
