Pasta with Extra Virgin Olive Oil, Garlic and Chilli
8 oz (225 g) linguine or spaghetti
4 tablespoons Extra Virgin Olive Oil
2 large cloves garlic, peeled and finely chopped
1 large red chilli, deseeded and finely chopped
Salt and freshly milled black pepper
Put the pasta on to cook in a pan with water. Then heat the Extra Virgin Olive Oil in a small frying pan and when hot, add the garlic, chilli and freshly milled black pepper. Cook very gently for about 2 mins, which will be enough time for the flavour to infuse the oil.
Once the pasta is cooked, drain it and return it to the saucepan, then pour in the hot oil. Mix well, then serve straight away on warmed plates. Delicious!
